Welcome to the Course!

Course Description

Spend 3 weeks tickling your taste buds and stuffing your tummy with culinary connoisseurs Mrs. Chen and Mrs. Clater! In this course, we taste our way through some staples of the culinary world: cheese, chocolate, coffee, olive oil, bread, and baked goods. We look at how and why these foods are crafted and what makes them Great Foods. We get hands-on as we hear from experts in the fields of coffee, cheese, and olive oil. The noshing continues as we learn to craft our own Great Food with field trips to King Arthur Flour in Vermont and Flatbread Co. in Amesbury. Our course will have you opening your minds as you open your mouths to the delicious possibilities of food. While chewing we ponder questions such as the following: What IS Great Food? What is the connection between food and culture? What systems are in place in the fine food industry? How can we be discerning in our tastes? What do the concepts such as class, cost, tradition, and authenticity have to do with fine foods? What is our relationship, current and future, to the food that we eat? Join us as we eat our way through these questions and more on our enriching quest to be better eaters, better tasters, and better cooks.


Course Expectations 
Unless otherwise indicated, class will begin at 9 am every morning in Mrs. Clater's classroom (309). Please try to eat a healthy breakfast each day as there will be a lot of food talk (and nothing makes the stomach rumble like talking about gourmet chocolate). While there will be a lot tastings, these are not meant to substitute a good breakfast or lunch. 

On days that we will be baking and cooking, it is imperative that we be respectful of the space that we are using as they will most likely belong to members of the faculty. This means not using materials other than those provided for you. If you need something, ask one of us, don't go rooting through drawers and cupboards. This also means cleaning up at the end of each session. Please also respect each other by sharing the responsibilities of both the cooking and the cleaning. 

Each night, homework will consist of a variety of readings, documentary viewings, and reflections as well as one journal entry during the course. It is essential that you complete the homework in order to fully engage the next day. Make sure to check the blog every night for any essential updates. 

We are lucky in that we have several field trips lined up for the course. These places are opening their doors to us and it is important that we represent Brooks is a positive way. For all field trips, but especially King Arthur Flour, you will be on your feet a lot so you should dress in comfortable shoes. Formaggio is allowing us into their cheese cave and it'll be really important that we follow the rules they establish before entering.
